Peach & Apricot Sour

nitially brewed in the Summer of 2021 with a wholesome blend of wheat and oats, carefully soured with a blend of lactobacillus and our house yeast. Racked into freshly emptied Chardonnay casks, alongside succulent peaches and apricots. The addition of these fruits triggering a secondary fermentation in barrel, imparting even more depth to an already intricate base. The resulting brew is bright and tangy, with a rich, fruity bouquet dominated by the ripe juiciness of the peaches and apricots. Balanced by the warming flavours of oak and gooseberry for the barrels. Smooth and medium-bodied with a crisp, dry and slightly tannic finish.
